we Cuba Street. A place with a storied past. A place stacked with layers of culture: memories, niches, outfits, food and music genres, venues come and gone, nights out, mornings over eggs, op shopping, record dropping, cafe hopping.

We take bookings during the week for lunch, all other times we take bookings for 8 or more otherwise we are walkin only,

We’re here to create a new kind of place, to serve an age-old need of connection.

Cuba is a patchwork quilt of identities: a diverse community of people who like to live, think and drink a little different to the rest. But in this world of algorithm-served ideas, segregated beliefs, inflation, gentrification, and a lack of in-person communication, this eclectic community is one we’re in danger of losing.

A good bar is never just a bar – it’s a spot to gather, feel like you’re apart of something, and enjoy life together. Our bar isn’t just a bar, it’s a community hub.

A place to remind us that we are a community, and ensure the culture stays kicking for years to come.

Greg

Originally from the UK, lapping up the beautiful Queenstown for the last 7 years. He joins us from Amisfield & Aryburn, with a strong background in cocktails and a passion for local treats; our beverage list is definitely special, eclectic, and refined, with a few hidden gems, just like him—a genuinely lovely hospo-lifer who loves to show everyone a good time. You will find Greg at the forefront of the Tav, or trawling around our neighbours or up in the hills taking in the vista.  

Head Chef

Elliot North

Originally from the south coast of the UK, Elliot North has stepped into the role of Head Chef at CST. His cooking is inspired by his travels across Europe and Asia, with menus that lean towards modern European flavours, grounded in classic French techniques. You’ll also find the occasional influence from Asia, with spices and ingredients making subtle appearances throughout his dishes.

Elliot has worked in a range of kitchens from large hotels to small, intimate restaurants where he’s spent years honing his craft and developing a style that blends precision with creativity.

We are Rich and Scott, 2 passionate individuals who love hospitality and are chomping at the bit to bring something special to Cuba Street. We have the Thistle Inn, an Iconic Historic Inn. And we want to create something special. We love good food, coffee, delicious bevvies, good tunes and good company. When the opportunity came up to take over Olive, we jumped, it’s such an awesome space; we had a vision, and that is currently being brought to life. Coffee & Courtyard life, extending into the night, festoons, sharing plates, larger plates, cocktails, soulful tunes, electric beats…. Unique like cuba street, that is what we are, we look forward to seeing you soon…
